| BREADFRUIT FISH CAKES |
| INGREDIENTS 2 cups cooked crushed breadfruit 2 cups cooked fish 1 onion (chopped) 2-3 tbsps. milk if necessary oil for frying 1/4 cup bread crumbs 2-3 ozs. flour 1 egg 1 oz. margarine 2 tsps. lime juice |
| METHOD: 1. Saute celery and onion in margarine, remove from heat. 2. Beat egg and add to breadfruit and fish. 3. Add seasoning, flour and bread crumbs, and lime juice. 4. Mix with milk to dropping consistency. 5. Drop by spoonful into deep hot oil. 6. Brown, drain and serve garnish with lettuce, sliced tomatoes and sweet peppers. |
