| GINGER BEER |
| INGREDIENTS 2 lemons 1 oz bruised root ginger 3 qts. boiling water 1 1/2 lbs sugar 1/2 oz fresh yeast 1 slice toast |
| METHOD: 1. Pare off the yellow part of lemon rind and squeeze juice into a bowl, add sugar, ginger and cream of tartar. 2. Pour the boiling water over. 3. When lukewarm add teh yeast, creamed with a little of the beer and spread the toast. 4. Ferment for 24 hours, then skim, strain, bottle and tie down securely. The beer will be ready to drink in 3 days. |
