BONELESS STUFFED FISH
 
INGREDIENTS

1 fish, 1-5 lbs.
1 lb bread crumbs
3 onions chopped
3 sweet peppers chopped
1 piece of hot pepper
1/4 tsp celery
1 can green peas
2 ozs butter
1 plug garlic, chopped
vinegar and seasoning to taste
 
METHOD:

1. Scale fish, remove back and gut.
Wash with vinegar and season with salt and pepper.
2. Saute vegetables in butter with any bones from fish. Discard bones and add seasoning and add this mixture to bread crumbs and cook for 3-5 minutes
3. Cook slightly
4. Pack into fish. Sew up side and shape.
5. Place in greased baking tray, dot with butter or arrange with strip of bacon and tomatoes.
6. Bake in hot oven 30-40 minutes
