FISH ESCABECHE
 
INGREDIENTS

3 lbs sliced fish seasoned
2 lbs onions sliced
1/2 pt. vinegar
1/4 lb fat pork
4 oregano leaves
6 leaves basil
1 plug garlic
2 green hot peppers
4 cups water
 
METHOD:

1. Half fry fish in oil.
2. Add four cups water.
3. Add chopped, sliced onions, vinegar, oregano, basil leaves, plug garlic, salt to taste and hot pepper.
4. Simmer for 10 mins
5. Serve with corn or flour tortillas.
