| INGREDIENTS 1 lb coconut (grated) 8 ozs. yams and/or cassava 1 slice pumpkin or carrot a pinch thyme 2-3 snappers or other fresh fish 1-2 plantains 1 green pepper 4 ozs. salt meat 1/2 recardo or paprika |
| METHOD: 1. Cut salt meat into small pieces and boil in 2-3 cups water, until tender. 2. Clean the fish and cut into serving pieces. Keep covered until ready for use. 3. Grate the cocnut and add 1 1/2 cups water, squeeze thouroughly and strain off the thick milk. Keep until ready for use. 4. When meat is tender, wash, dry and peel the vegetables, then cut into pieces. 5. Pour the coconut milk into a saucepan with the meat. 6. Add the onino, seasonings, plantain and yams. Allow to boil until tender. 7. Add the carrots and fish on top, then simmer until the fish is tender. 8. Serve hot for lunch. N.B. Make Matilda Foot with the green plantain. |
