| BELIZEAN FISH STEW |
| INGREDIENTS 3 lbs fresh fish, cleaned and cut in pieces 2 half green plantains or bananas 1/2 lb okra 1 medium tomato 1-2 coconuts 2 ozs. flour 1 lb. coco 1 tbsp. shortening |
| METHOD: 1. Clean fish, cut into pieces, season to taste 2. Brown flour and water to make a smooth paste 3. Grate coconut and strain to get milk. Put to boil. 4. Add plantains, coco, okra and tomato 5. Add the brown flour and boil until all ingredients are soft. 6. Add seasoned fish and put to simmer for about 15-20 mins 7. Serve warm |
