GARIFUNA BARBECUE FISH
 
INGREDIENTS

4-5 lbs big fish
1 lime
1 tsp. black pepper
Damari or fish sauce
2 banana or plantain leaves
4-6 pieces of green coconut stems
 
METHOD:

1. Mix together fish, bread crumbs, seasoning lemon juice, and egg to a soft consistency.
2. Put in well greased loaf tin and sprinkle with brown bread crumbs on all sides.
3. Bake in moderate oven for 30 mins. Serve hot.
