BUNDIGA (MATILDA FOOT)
 
INGREDIENTS

8 green bananas
2 lbs seasoned fish or conch
1/2 tsp black pepper
6 cups cocnut milk
1 tsp salt
2 leaves oregano
1 garlic clove
 
METHOD:

1. Peel, wash and grate bananas, seasoned with salt and black pepper.
2. Preheat coconut milk.
3 Add garlic and oregano.
4. Drop in the banana mixture by spoonfulls.
5. Leave to simmer for 15 mins., basting now and then.
6. Add seasoned fish or conch and cook until done.
7. Serve in flat plate, it will cool faster.
