| ARROZ CON POLLO (One Pot Dinner) |
| INGREDIENTS 1 cup rice 1/2 cup chopped onion 3/4 tsp salt 1/8 tsp. black pepper 2 cups cooked tomatoes 1 lb. chicken 3 Tbsp. margarine 3 tsp. fat 1/2 cup grated cheese (optional) 1 cup green peas 1 lb. cooked carrots 1 small sweet pepper 1 cup water or stock |
| METHOD: 1. Heat fat in saucepan and brown chicken. 2. Fry onion and add to chicken with tomatoes, stock, sweet peppers, green peas, and carrots. 3. Cook for 5 mins., add seasoning, add margarine. 4. Wash rice, drain, add to chicken, reduce heat to simmer. 5. Continue cooking until rice is tender. Add cheese (optional) and simmer till melted. |
