RUM POE POE
Eggnog or rum poe poe, as it is locally called is the traditional drink for Christmas morning to be followed by a very large meal. It is sometimes served with coke or as a drink for those who cannot stomach spirits during this festivity
 
INGREDIENTS

6 eggs (separated)
1 pt. evaporated milk
(or double cream)
grated nutmeg
2 tins condensed milk (or 8ozs white sugar)
1 pt. colourless rum
finely grated rind of 1 lime
 
METHOD:

1. Beat the egg yolks with condensed milk or sugar until thick and creamy.
2. Stir in the milk and rum. Whisk the egg whites until very stiff and fold into the mixture.
3. Fold rum mixture into the egg mixture. Add lime rind and nutmeg/.
4. Store in a bottle or serve immediately into glasses.
