TAMARIND FIZZ
 
INGREDIENTS

1 lb shelled tamarind
1 qt. water
1 oz. crushed root ginger
4 cups sugar
1/2 tsp bicarbonate of soda
 
METHOD:

Soak tamarind and ginger in water for at least half hour. With a fork or spoon, remove pulp from tamarind. Sweeten and strain. Serve icy-cold, adding bicarbonate of soda when serving.
