| BAKED PORK WITH MOCK APPLE SAUCE |
| INGREDIENTS 6 lbs loin of pork 3 hot peppers 1 onion 1 tsp powdered sage 4 ozs shallots 3 tbsps thyme (chopped) 3 tbsps marjoram (chopped) 6 ozs cooking butter for basting salt and pepper to taste |
| METHOD: 1. Prepare and clean the meat for roasting. 2. Mince all the seasonings together. Score the pork with narrow lines. Place the seasonings well into the incisions. Rub the salt, pepper and sage well into the meat. Paste meat with butter all over. 3. Place in a large baking tin or roasting pan with about half pint of water and wrap join in greased grease-proof paper and roast in a covered tin in a hot oven (425°F, Gas 7) for ten mins. and then reduce heat to moderate (350°F, Gas 4) for the remainder of the time. Allow 25 mins. per lb. and 25 mins over. Baste frequently with hot fat. |
