| BANANA BREAD |
| INGREDIENTS 4 ozs. butter 4 ozs. sugar 1 egg 8 ozs. plain flour 1 tbsp baking powder 1/2 tsp salt 1/2 tsp nutmeg 2 large ripe bananas 1 tsp. vanilla 3 ozs. seedless raisins 4 tbsp chopped onions |
| METHOD: 1. Cream butter and sugar together in amixing bowl until light and fluffy. Add the egg and beat thoroughly. 2. Sift the flour, baking powder, salt, and nutmeg into another bowl. 3. Mash the banana and add the vanilla. 4. Add the sifted ingredients and banana alternately to the egg, butter and sugar mixture. Beat after each addition until thoroughly blended. 5. Toss the raisins with a tsp of flour and then with the peanuts. Add butter to mix well. 6. Pour into a greased loaf tin. Bake in a 350°F oven for 1 hour or until test comes out clean. |
