BANANA MUFFINS
 
INGREDIENTS

2 cups all purpose flour
1/2 cup flour
2 1/2 tsp baking powder
1/2 tsp. salt
1/4 tsp nutmeg
1/2 cup mashed ripe bananas
1/2 cup milk
1/3 cup vegetable oil
1 egg (beaten)
 
METHOD:

1. Heat oven to 375°F. Grease and lightly dust muffin tins with flour.
2. Combine flour, sugar, baking powder, salt and nutmeg. Sift into a large bowl, stir in mashed bananas, with oil and egg. Stir just until dry ingredients are moist.
3. Spoon batter into muffin tins, filling each two thirds (2/3) full.
4. Bake 20 mins or until golden and toothpick inserted in center comes out clean. Serve warm. Make 12 muffins.
NOTE: If desired, use 1/4 cup honey instead of sugar. Stir in honey after adding mashed banas..
