| BREADFRUIT BREAD |
| INGREDIENTS 1/2 ripe breadfruit 4 lbs flour 1 tbsp yeast 1 tsp. salt 1 tbsp sugar 1 cocnute 1/2 lb lard |
| METHOD: 1. Set yeast in 1 cup water. 2. Peel breadfruit. Mash in a bowl until fine. 3. Grate coconut, add a cup of water and strain out milk. 4. Pour flour into large bowl. Add the mashed breadfruit, yeast, lard, salt and sugar. 5. Add coconut milk gradually until the mixture is wet. Knead. Leave aside to rise. 6. After the dough has risen, cut into 2 loaves. Leave to rise again for about 10-15 mins. 7. Bake at 350°F for 20 mins or until golden brown. |
