ISWA (Fresh Corn Tortillas)
 
INGREDIENTS

Green corn (hard)
Baking powder
Salt to taste
 
METHOD:

1. Grate or grind the green corn.
2. mix the corn with salt, to taste. Add one level tsp. baking powder to every cup of ground corn. Mix thoroughly.
3. Spread out in tortilla size on a hot, greased komal.
4. Turn over as tortillas begin to change to a brighter yellow colour. Allow to cook through.
5. These can be flavoured and sweetened before cooking. Serve with meals.
