SWEET POTATO PUFFS
 
INGREDIENTS

2 cups warm mashed potato
3 lbs. potatoes (raw)
2 tbsps chopped colantro
1 1/2 - 2 tsp minced onion
3 eggs, separated
salt and pepper to taste
 
METHOD:

1. Boil sweet potatoes; mash
2. Beat egg yolks. Add mashed potatoes, colantro, onion, salt and pepper.
3. Place in greased muffin pans bake at 350°F until brown.
