| BRAN BREAD |
| INGREDIENTS 3 lbs white flour 1 lb bran 2 tsp. salt 1 oz yeast 3 tsp sugar 2 pts. water or coconut milk 3 ozs shortening |
| METHOD: 1. Crush yeast and sugar together and add warm water. Set to rise in warm place. 2. Sift flour and salt, add bran and rub the fat into the flour using a knife.? 3. Make a well in center and add well risen yeast mixture. Knead to a smooth elastic dough using warm coconut milk. Grease the outside of the dough and cover, leave to rise until twice the size. 4. Knead lightly and shape into loaves. cover and leave to prove 15-20 mins. Bake in a hot oven, temperature may be reduced after the 15 mins. Bread is done when outside is brown and crips and sounds hollow when tapped on the bottom. NOTE: Sugar and fruits may be added to make a sweet fruity bran bread. This amount can make 6 large loaves. |
