| INGREDIENTS 1 1/2 lbs chicken 1 1/2 lbs ground pork (optional) 1/8 cks. black relleno seasoning 1 clove garlic 1 recardo 2-3 leaves apazote 2 tomatoes (peeled) 2-3 leaves oregano 1/2 onion, sliced salt to taste a piece of corn mace or flour to thicken |
| METHOD: 1. Prepare chicken, cut into meat pieces and season with pepper and salt. 2. Season ground pork with the recardo and 1/2 of the relleno seasoning and salt to taste. 3. Fry the ground pork (without fat) for 15 - 20 mins, until cooked, stirring from time to time. 4. Fry the chicken until light brown. 5. Pour 2 1/2 pints water in a sauce pan, and add the apazote, oregano, onion, garlic and tomato. 6. Blend the relleno seasoning with some water and add to water and other seasoning then bring to the boil. 7. Add the chicken and ground pork and boil gently until meat is tender.. 8. Blend the corn mace or 2 tbsps. flour with a little water and stir inot the liquid, keep stirring, until liquid thickens. 9. Boil for 15 mins then serve. |
