CHEESE BREAD
 
INGREDIENTS

1 oz yeast (active dry)
1/4 cup warm water
1 1/2 cups warm milk
2 tbsp sugar
1 tsp salt
6 cups all purpose flour
1 3/4 cups grated cheese (Cheddar)
1 egg yolk
Wangla (sesame) seeds
 
METHOD:

1. In a large mixing bowl, dissolve yeast in warm water. Gradually add milk, sugar and salt, stirring with a wodden spoon after each addition. Slowly stir in flour.
2. Place dough on a lightly floured board. Knead until dough is smooth and elastic (it will spring back when lightly pressed)
3. Place dough in a large lightly greased bowl, turning it over and over so that surface of dough is greased. Cover with towel and let stand in a warm, draft-free place until doubled about 1 hr.
4. Punch dough down. Place dough on a lightly floured board. Knead in cheese.
5. Cut dough into 6 equal parts. Wtih hands roll each section into a roll 15 ins. long.
6. Place 3 rolls side by side and braid, press ends together to seal. Repear with remaining 3 rolls.
7. Place braids on a baking sheet; cover with a towel. Let stand in a warm draft-free place until doubled about 1 hour.
8. Heat oven 350°F. Mix egg yolk with 1 tsp of water; beat well. Brush loaves with egg yolk mixture. Sprinkle wangla (seasme) seeds on each loaf. Bake for 40 mins.
