CREOLE STYLE PORK CHOPS
(4 Servings)
 
INGREDIENTS:

4 1/2 thick pork chops
2 cups tomato juice
1/2 tsp salt
1/4 cup chopped onion
1/2 cup uncooked rice
1 Tbsp fat
 
METHOD:

1. Brown rice in fat in a skillet.
2. Push the rice to one side and brown the chops and the onion.
3. Add tomato juice and salt.
4. Cover tightly.
5. Cook slowly about 1 hour.
6. Remove cover and cook five minutes to fluff rice.
7. Serve chops on top of the rice.
