BANANA CREOLE
 
INGREDIENTS

4 large ripe bananas peeled and sliced lenghtwise
2 tsps. sugar
1/2 lemon or lime
1 spoon rum
1 tsp butter
1 pt. milk
3 tsps. custard powder
 
METHOD - BANANAS:

1. Place bananas in regular dish. Sprinkle lime juice and sugar. Set aside for a few minutes.
2. Pour rum over the bananas, and dot with butter.
3. Bake in moderate oven for 10 minutes

METHOD - CUSTARD:
1. Dissolve custard powder in 2-3 tsps. cold milk, set aside.
2. Bring remaining milk to boil.
3. Pour boiling milk over dissolved powder, stirring vigorously as it thickens.
4. Pour into dish to cover bananas.
5. Return to oven and bake 10 minutes til custard sets.
