| METHOD
- BANANAS: 1. Cut tops of guavas and rub thorugh a sieve. Weigh pulp. Put in a saucepan with the same weight of white sugar. 2. Bring to a boil and simmer over medium heat until mixture becomes stiff and shrinks from the sides of the pan. 3. Turn out into a greased and sugared tin. 4. When cold, dredge with icing sugar and cut into squares. 5. Make certain that the cheese is thoroughly dry before storing. NOTE: Cheese can be made from the guava pulp after the juice has been extracted for guava jelly. But, because of the excessive cooking and handling though this process, it will result in a dark color. |
