RICE PUDDING
 
INGREDIENTS

2 cups rice, uncooked
1 tin condensed milk
2 eggs, well beaten
1/2 cup sugar
nutmeg
cinnamon
 
METHOD:

1. Wash rice. Boil until very soft. Allow to cool slightly.
2. Add sugar and stir. Add condensed milk, dash of cinnamon, and nutmeg and eggs. Mix well.
3. Pour into a greased baking dish and bake for 30 minutes in a moderate oven.
4. Serve with sauce e.g. lemon curd.
