| SWEET POTATO AND COCONUT PUDDING |
| INGREDIENTS 2 lbs sweet potatoes 1 lb sugar 2 grated coconuts grated rind and juice of 1 lemon or 2 limes |
| METHOD: 1. Boil and mash potatoes. 2. Blend with remaining ingredients. 3. Turn into a large shallow well greased baking pan. Bake in a moderate oven (350°F) Gas 4, for one hour. |
