| HAMADILLO STEWED |
| INGREDIENTS 2 lbs. hamadillo flesh 1 onion, chopped pepper, salt to taste 3 tsp cooking oil 1/2 lb cubed potato 1 small recardo vinegar |
| METHOD: 1. Wipe hamadillo meat. Season with vinegar, recardo, salt, pepper and onion. 2. Heat cooking oil in saucepan. Add seasoned meat and brown on both sides. Leave the saucepan open. 3. Add remaining seasoning gradually, add a little water until meat is tender. 4. Lay potato cubes on meat. Close pot and cook until potatoes are tender 5. Serve with rice, vegetable salad and sliced fried ripe plaintains. |
