| MAYA CHICKEN SOUP |
| INGREDIENTS 2 1/2 - 1/3 lbs chicken, cut into small pieces 1 tsp dry oregano 1 colantro leaf (samat) 1 tbsp salt 3 cloves garlic, crushed or ground 1/2 - 1 tsp achote (anato) 2 - 3 leaves of mint |
| METHOD: 1. After cutting chicken in small pieces, wash three times in clean water. 2. Place in medium pot and cover with water plus 6 ins. or more depending on how much soup is desired. 3. Over hot fire allow to boil, removing scum that rises to top. 4. Add salt, garlic and spices except mint. 5. Boil until tender, then remove from fire and add mint. Eat with corn tortilla, or with rice or yams. The latter can be added to pot with chicken or steamed separately. |
