OKRA SOUP
 
INGREDIENTS

1/2 lb pig tail
12 small okras
2 ozs margarine
2 tbsps. tomato paste
1 coco
4 ozs. fish
1 carrot
1/2 potato
4 pts. water
1/2 fresh conch
2 ozs. margarine
2 tbsps. flour
1 tsp. salt
dash black pepper
 
METHOD:

1. Mince pig tail, conch and fish.
2. Dice and wash vegetables
3. Melt butter and cook meat, fish and vegetable for 5 minutes
4. Add flour and stir in tomato paste blending well.
5. Stir in water and keep stirring until soup comes to boil.
6. Skin and add seasoning and allow to simmer gently for 45 mins. Serve.
