CLEAR MIXED PICKLES
 
INGREDIENTS

1 lb shallots
1 large cucumber or
2 ridge cucumbers
3 pints spiced vinegar
1 lb cauliflower
sweet pepper
2 tbsps coarse salt
pickling spices, chilies
 
METHOD:

1. Peel the shallots, remove green from cauliflower and break into sprigs.
2. Peel cucumber and cut into cubes. Place on a dish, sprinkle with salt and leave overnight.
3. Strain off the salt and pack vegetables in layers in glass jars. Fill up with cold spiced vinegar, adding a few spices and chillies. Tie down.
Keep for a few months before using.
