| CELERY SAUCE |
| INGREDIENTS 8 small tomatoes 1 medium onion 6 stalks celery 1/2 cups and 2 tbsps sugar 1 1/2 tsps salt 1/2 tsp whole cloves 1/2 tsp whole allspice 2 sticks cinnamon 1/2 tsp pepper |
| METHOD: 1. Peel tomatoes and cut into cubes. 2. Chop onions and celery and combine vegetables with sugar, vinegar, salt and pepper in a saucepan. 3. Tie cinnamon sticks, cloves, and allspice in little cheesecloth bag and add to mixture. 4. Cook mixture slowly stirring occassionally for about 3 hours or until thick as chili sauce. 5. Remove bag of spices and discard. 6. Pour celery sauce into 4 or 5 pint jars and seal. 7. Serve as relish with hot or cold pountry. |
