| CARROT AND ORANGE MARMALADE |
| INGREDIENTS 4 cups grated carrots 2 oranges 2 Seville oranges or lemon 2 cups sugar 6 cups water |
| METHOD: 1. Peel and squeeze oranges and lemons. Save juice. 2. Cut peel into pieces. 3. Boil till tender for about 20 minutes in 3 cups water. 4. Add carrots and 3 more cups water and continue to cook for 20 minutes. 5. Add juice to each cup of mixture add 1 cup sugar. 6. Boil until thickens. 7. Pour into hot sterlized jars. |
