GUAVA JELLY
 
INGREDIENTS

Ripe guavas
White sugar
sterilized bottles
lime juice
 
METHOD:

1. Wash guavas. Cut off ends and bad spots. Cut into quarters.
2. Place in large pot and cover fruit with water. Cover pot and bring to boil. Boil for 2 hours. Leave overnight.
3. Strain through cheesecloth. Do no squeeze. Liquid should be clear.
4. Measure amount of liquid strained. Add 3/4 cup sugar for each cup of liquid. Add lime juice to taste.
5. Cook to jelly point (until syrup forms a bead when dropped onto a plate). Skim off scum from top while cooking.
6. Pour into hot sterilized bottles leaving space at top. Seal.
