HOME-MADE CANDIED PEEL
 
INGREDIENTS

peel of 4 sweet oranges
water
1/2 bicarbonate of soda
granulated sugar
 
METHOD:

1. Wash the oranges.
2. Remove the peel in quarters by cutting with a sharp-pointed knife through the peel right round the orange, starting at the stalk end, then cut in t he opposite direction to quarter it.
3. Remove as much loose pith as possible from inside the peel.
4. Soak the peel in a solution of bicarbonate of soda and 2 pts. (5 cups) water for 20-30 minutes then strain away the water.
5. Now make a sugar syrup with 8 ozs. sugar and 1/2 pint (1 1/4 cups) of water in which the peel was boiled, add the drained peel and simmer for about 30 minutes, until transparent and the syrup thickens.
6. Remove the peel on to a wire cake rack to a drain, overnight.
7. Boil up the syrup again and drop the peel into it; take up on to the rack and leave to dry.
8. Roll the peel in granulated sugar and store in covered jar in a cool place. The peel keeps for 3 to 4 months. Lemon peel can be treated in the same way.
