| GREEN MANGO CHUTNEY (Sweet) |
| INGREDIENTS 25 green mangoes 6 ozs apple rings 6 c. salt 1 1/2 tsp nutmeg 3 onions 5 1/2 pts vinegar 1/2 oz raisin 1 1/2 oz garlic 3 lbs brown sugar 1 1/2 tsp cinnamon 3 ozs. powdered chilies 4 tomatoes or tomato puree 1/2 green ginger |
| METHOD: 1. Peel and slice mangoes thinly, sprinkle over them the salt and let them remain for 36 hrs., then drain them well. 2. Make a syrup by boiling together the sugar and 2 1/2 pints of vinegar. 3. Put the remainder of vinegar into preserving pan (use enamel) add slice mangoes and chopped up apple rings. 4. Bring to the boil and simmer gently for 20 mins. then add chopped nutmeg. Cook very slowly for 40 mins, stirring well so mixture does not burn and it appears soft, add syrup gradually stirring the last 10 minutes. 5. Stir well and boil the mixture until part of the syrup is absorbed. 6. Put into dry bottles. Cover securely and store in a dry place. |
