| SWEET PICKLED ONIONS |
| INGREDIENTS 2 lbs small onions or shallots 2 pints spiced vinegar 4 pints water 12 ozs coarse salt 4 ozs sugar |
| METHOD: 1. Peel the onions or shallots, boil the water and salt, allow it to cool and pour half over the onions. 2. Leave for 2 days, then drain onions and pour on remaining brine, leaving for 2 more days. 3. Drain and rinse the onions, put into a pan with the spiced vinegar and the sugar and simmer for 10 minutes, put into jars and tie down when cold. Keep for 2-3 weeks before using. This gives soft pickled onions |
