PLUM JAM
 
INGREDIENTS

4 lbs ripe plums
6 cups sugar
1 1/2 cups water
1/4 cup lime juice
 
METHOD:

1. Boil plums until soft (10 minutes). Discard seeds and sieve.
2. Combine fruit and sugar. Boil for 20 minutes, stirring constantly. Cook until jam point is reached.
3. Skin off scum.
4. Pour into hot sterilized jars.
