PAWPAW JAM
 
INGREDIENTS

1 pawpaw (ripe)
2 limes
1 whole ginger root
sugar
 
METHOD:

1. Skin pawpaw, reserve seeds, cut into small pieces.
2. Measure 1 cup.
3. Add the juice of the limes and the ginger coarsely sliced.
4. Add sugar, allowing 1 cup sugar to each cup of fruit.
5. Remove ginger.
6. Boil until it reaches jam stage. (It will set when you drop onto a cold plate)
7. Put in warm jars and cover tightly.
