| CREOLE PORK CHOPS |
| INGREDIENTS 4 rib pork chops (1/2 to 3/4 in. thick) 4 thin slices 4 tbsps. cooked rice 8 ozs tomato 1 tsp salt 1/4 tsp pepper 4 green pepper rings |
| METHOD: 1. In a 10" skillet, brown chops over medium heat. Sprinkle with salt and pepper. 2. Top each with 1 large onion slice, 1 green pepper ring, 1 tbsp rice in ring and 1/4 cup tomato or slices or tomato. 3. Reduce heat. Cover and simmer until done, about 15 mins. Add a small amount of water if necessary. |
