RIPE TOMATO CHUTNEY
 
INGREDIENTS

3 lbs ripe tomatoes
12 ozs cooking apples
1 lb. brown sugar
8 ozs onions
8 ozs seedless raisins
12 ozs. coarse salt
1 1/2 pts. spiced vinegar
 
METHOD:

1. Dip tomatoes in boiling water and skin them.
2. Chop coarsely, removing stalk ends.
3. Skin and chop onions; mix with chopped tomatoes.
4. Peel, core and chop apples.
5. Put apples and raisins, sugar and salt in the vinegar and bring to the boil.
6. Add tomatoes and onions and simmer 45 minutes - 1 hour, or until thick, stirring often.
Put in heated jars and cover securely while hot.
