SWEET PICKLE OR CHUTNEY
 
INGREDIENTS

4 lbs green apples or
1 lb dried apple rings soaked in 3/4 pt. water
1 lb onions chopped
8 ozs gooseberries
12 ozs. brown sugar
1 oz. mustard seed
1 lb tomatoes, green, red or mixed
1 lb currants
1 lb sultanas
1 lb melon or marrow, chopped
2 ozs. ground
1 oz salt
4-5 pints vinegar
 
METHOD:

1. Peel and core apples and cut into slices; skin tomatoes and cut up roughly.
2. Put in a large pan with other ingredients and cover with vinegar.
3. Bring to the boil and simmer 45 minutes to 1 hour, stirring frequently. Apples should be pulpy and sultanas soft. Pour into heated jars and tie down. Add extra vinegar if chutney evaporates too much before apples are cooked.
