| TOMATO CATSUP |
| INGREDIENTS 1 dozen large tomatoes 1/2 lb carrots, shredded 1 1/2 tbsps. salt 1 1/2 cups vinegar 1/2 cup sugar 1 lb onion, chopped 2 green peppers, diced 2 tsps. allspice 2 sticks cinnamon 1 tsp. whole cloves |
| METHOD: 1. Wash, scald, peel and core tomatoes. 2. Cook all vegetables together until soft. Press through a fine sieve. 3. Combine vinegar and sugar. Tie whole spices in a cheese cloth bag. Add to tomato mixture. 4. Add remaining ingredients and cook slowly until as thick as desired or about 45-60 mintues. As the mixture thickens, stir frequently to prevent sticking. 5. Remove spice bag. Pour, boiling hot, into jars. Leave 1/8 inch head space. Adjust caps. Process 15 minutes. Yield 1 -2 pints. |
