| TOMATO SAUCE |
| INGREDIENTS 6 lbs sound ripe tomatoes 1/4 oz salt 1 tbsp tarragon vinegar 8 ozs granulated sugar pinch of cayenne pepper 1 1/2 pts spiced vinegar good pinch of paprika |
| METHOD: 1. Wipe and slice tomatoes; cook in uncovered pan until tender. 2. Rub through a hair sieve. 3. Return pulp to a clean pan, heat, add sugar, salt, cayenne pepper and paprika, stir until sugar is melted; boil gently, keeping stirred, until moderately thick. 4. Add tarragon vinegar and spiced vinegar, continue boiling gently and stirring frequently until sauce is of thick cream consistency; in judging consistency, allow for sauce thickening up while cooling. 5. While sauce is still hot, pour into hot bottles though a funnel, to reach one inch from top; cork down at once with new corks previously brought to the boil in cold water and boiled for 15 minutes. 6. When sauce is cold, cut corks level with top of bottles, cover with wax, or put on screw tops. |
