INGREDIENTS

1 turkey or chicken
2 lbs. ground beef
2 lbs. ground pork
1 doz. eggs
2 pks. chimole seasoning
1/2 cup cooking oil
4 round recardo (red)
2 onions
1 lb tomatoes
12 plugs garlic
1/2 cup vinegar
salt and pepper to taste
 
METHOD:

Season turkey or chicken a few hours before stuffing.
Stuffing: Combine ground beef and pork adding salt and pepper and vinegar, grind together one onion, 6 plugs garlic, 1 pk. chimole seasoning and add to ground meat., let it stand for at least half hour, then cook it in usual way, adding little water if necessary.

Boil 9 eggs and mince the white and add the latter to the cooked ground meat. When cooled, add 3 raw eggs to cooked meat. Mix well and stuff bird adding egg yolk, one of half at a time as you stuff the turkey.

Gravy: Cut up tomatoes, 6 plugs garlic, fry in 1/2 cup cooking oi in the pot you are going to cook the turkey. Dilute the black seasoning and recardo in 4 cups of water and add to fried tomatoes, etc. Put bird in pot and cook for 3 hours or until tender.
