ROAST STUFFED GIBNUT OR DEER
 
INGREDIENTS

Leg of Gibnut or deer (or quarter)
1/4 tsp pepper
1 clove garlic
1 tsp. salt
1/8 tsp. thyme
piece of recardo
2 tbsps. tomato paste

STUFFING:
3 tbsp breadcrumbs
2 tbsp chopped onions
1 tbsp melted butter
1 tbsp chopped sweet pepper
salt and pepper to taste
 
METHOD:

1. Wash or wipe gibnut or deer with a cloth dipped in vinegar or juice of a lime.
2. Make slits with the point of a sharp narrow knife, into thickest parts.
3. Mix together all the ingredients for the stuffing.
4. Stuff each slit with some of the stuffing.
5. Mix the seasonings together and rub all over the meat. Allow to stand for 1/2 hour.
6. Place meat in a roaster with 2 tbsps. cooking oil and roast in oven for 375°F for 30 mins.
7. Reduce the temperature to 300°F and roast 1 - 1 1/2 hrs.
8. Baste meat from time to time with tomato paste mixed with water.
