CREAM OF SPINACH SOUP
 
Wash thoroughly 1/2 pound spinach. Cook 5 minutes in 2 cups boiling water and 1/4 tsp. salt. Drain liquid and add to it 1 small onion, diced, and 1 Tbsp. chopped celery leaves. Boil 10 minutes. Strain. Meanwhile melt in saucepan 1 Tbsp. butter. Blend in 1 Tbsp. flour, 1/2 tsp. salt, and a few grains pepper. Stir in slowly 1 cup Pet Milk diluted with 1 cup meat stock or water. Cook 10 minutes, stirring frequently. Then add spinach liquid and finely chopped spinach. Heat thoroughly. Serves six people.
