| SPECIAL FRICASSEED DUCK |
| INGREDIENTS 1 4-5 lb duck 3 tbsps. cooking oil 1 onion sliced 2 red hot peppers 4 tbsps. wine 2 tomatoes thyme, marjoram, shallot 1 tbsp vinegar 1 tbsp margarine 2 tsps. sugar 11 tbsps flour 1/4 tsp ground clove 1 clove garlic salt and pepper to taste |
| METHOD: 1. Wash and cleanthe duck inside and out. Cut up the duck into serving pieces and place in a mixture of lime and salt. Mince seasonings. Wash off lime and salt mixture fromduck and mix seasonings well into it. Cover and set aside for 30 mins. 2. Heat oil and add the meat, leaving seasonings in the bowl. Add water gradually until meat is tender. Then add seasonings and margarine. Cook until seasonings are done. Thicken gravy with flour, mixed into a paste. Add wine last. 3. Serve hot. Garnish with slices of oranges or orange segments and chopped parsley. |
