| FISH SOUP (Cooking Time: 1 ½ hrs) |
| INGREDIENTS 1/2 lb fresh fish Fat for frying 1 slice onion 1 thick slice yam 1/2 or 1 medium potato 1/2 or 1 medium potato Recardo 1 green plantain 1 slice sweet pepper 1 coco 1/2 tsp salt and pepper 3 pints water A little thyme 1 level tsp flour |
| METHOD: 1. Prepare the fish for cooking and cut into serving pieces. 2. Season with 1/2 tsp. salt and pepper and allow to stand. 3. Peel and wash vegetables, then cut into small pieces. 4. Drain and fry fish until brown. 5. Pour off excess fat, then add flour to frying pan and cook flour until very brown, stirring all the time. 6. Add 1/2 of the water (mixed with recardo) slowly stirring all the time until smooth. 7. Add the rest of the water. 8. Bring to the boil then add the vegetables and boil until vegetables are tender. 9. Add the fish and reduce the heat to simmer for 10 minutes. SERVE HOT. |
