GINGER WINE NO. 2
 
INGREDIENTS

2 ozs. green ginger
1/2 seville orange
1/2 cup raisins
4 1/2 lbs sugar
2 lemons
6 qts. water
1/4 oz. icing sugar
1 pk. dry yeast
1 cup brandy
 
METHOD:

1. Wash and beat ginger. Remove the rind from the lemons and orange as thinly as possible. Add the juice of the lemon rinds and all other ingredients to water and boil for 1/2 an hour. when lukewarm, add yeast and brandy. Cover and leave to ferment in a warm place for 1 week. Strain off cork tightly. Store in a cool place.
