| INGREDIENTS 1 gallon Hiyu drink 4 lbs white sugar 1 tbsp yeast 1 tbsp ginger |
| METHOD: 1. Strain Hiyu in a jar. 2. Add sugar, yeast and ginger. 3. Leave for 1 week. 4. Strain and bottle. Note: Hiyu is the very coarse part of the cassava meal after it has been forced through a seive. This coarse part is placed on the Budarie or Comal and baked until brown. |
