LEMON WINE
 
INGREDIENTS

10 lemons
4 lbs sugar
1 gal water
1 pk yeast
(prepared)
 
METHOD:

Wash the lemons thoroughly and peel rind thinly off 5 of them. Dissolve sugar in water; add lemon and rinds and bring to a boil. Cool and add the strained juice of all the lemons. Add the yeast to the liquer. Cover and leave for 48 hours, stirring several times. Strain, pour into jar, seal with an air lock and leave to ferment. When all working has ceased, syphon off into clean jar. Leave for 1 year, then bottle.
